MOLASSES SPICE COOKIES 
1 1/4 c. whole wheat pastry flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
1/3 c. butter, softened
1/4 c. egg substitute or 1 egg
2 tbsp. molasses
1 tbsp. vanilla
1 c. date sugar
1/4 c. currants

Preheat oven to 325 degrees.

Sift together dry ingredients. In a large bowl, beat together butter, egg, molasses, vanilla and date sugar until thoroughly mixed. Stir in currants. Add dry ingredients and stir until completely blended.

With floured hands, form dough into 1-inch balls. Place 1 inch apart on baking sheets. Bake about 12 minutes until cookies puff up and crack on top. Cool on wire racks. Makes about 2 dozen cookies.
