BEEF TOMATO SOUP 
1 lb. ground beef
3 tbsp. butter
1 (#2) can stewed tomatoes
2 carrots, sliced
1 onion, chopped
1 green pepper, chopped
2 1/2 c. hot water
1/2 c. diced celery
2 tsp. salt (I omit)
Dash of pepper
1/4 c. barley
2 beef bouillon cubes
2 c. diced potatoes

Brown ground beef and then simply blend in all other ingredients well. Simmer for 1 hour. Makes four generous "supper" servings. Ground turkey can be substituted for beef. This makes recipe lower in fat. Delicious with salad and crusty rolls for dinner.
