CHEDDAR TUNA CHOWDER 
2 c. boiling water, salt
1-2 lg. potatoes, peeled and diced in 1/2 inch pieces
1/2 c. carrot, diced
1/2 c. celery, diced
1 sm. onion, chopped
1/4 c. butter
1/4 c. all purpose flour
2 c. milk
3/4 lb. sharp cheddar, shredded
1 (6 1/2 oz.) can tuna, drained and flaked
1 (8 oz.) can cream style corn
Pinch dried rosemary
Few drops hot pepper sauce
Chopped chives

Put water in saucepan and season with salt. Add next 4 ingredients. Bring to boil; cover and simmer for 10 minutes. Do NOT drain. in small kettle, melt butter and blend in flour. Gradually stir in milk and cook, stirring until smooth and thickened. Add cheese and stir until melted.

Add vegetables and liquid, tuna, corn, rosemary, and hot pepper sauce. Add salt to taste and serve with a garnish of chives. Makes about 2 quart, or 6 servings. Serve with corn bread and fruit for dessert.
