PEACH JELLY 
3 1/2 lbs. peaches
7 1/2 c. sugar
2 pouches Certo fruit pectin
1/4 c. lemon juice
1/2 c. water

You will need 8 jelly jars. Pit (do not peel) peaches. Chop fine. Add water. Cover and simmer 5 minutes, stirring occasionally. Add remaining ingredients. Simmer 10 minutes. Pour into jars and cool.
