FROZEN LEMON DESSERT 
3/4 c. finely crushed Rice Krispies (other cereals such as Wheaties or Nilla
Wafer cookies could be used)
3 eggs, separated
1/2 c. sugar
1 c. whipping cream
1 tbsp. lemon rind (optional)
1/4 c. lemon juice

Thoroughly grease refrigerator tray. Coat sides and bottom with crumbs, reserving 1/2 for top. Beat egg whites until they hold a point. Gradually beat in the sugar until stiff and glossy. Beat yolks until thick and fold into meringue mixture. Whip cream until stiff. Add lemon juice. Fold into egg mixture and pour into freezer tray. Sprinkle crumbs on top. Freeze. Will keep several days.
