CONFETTI COLESLAW 
1 sm. head red or green cabbage
2 lg. carrots, shredded
2 med.-size tart apples, chopped
4 green onions, thinly sliced
1 c. plain yogurt
1/4 c. mayonnaise
3 tbsp. white wine vinegar
1 tbsp. sugar
1/2 tsp. dry tarragon
Salt and pepper

In a salad bowl, combine cabbage, carrots, apples and onions. In medium-size bowl, combine yogurt, mayonnaise, vinegar, sugar and tarragon - mix until well blended.

Just before serving, pour dressing over cabbage mixture and mix lightly until well coated. Serves 6.
