SCALLOPED TURKEY 
2 c. diced roasted turkey
1/2 c. chopped celery
1/4 c. chopped green pepper
3 tbsp. butter
2 c. potato chips, lightly crushed
2 tbsp. flour
1/4 tsp. salt
1 1/2 c. milk
1 tbsp. chopped pimiento

Cook celery and green pepper in 1 tbsp. butter in a pan. Remove mixture from pan. Melt remaining butter in pan. Blend in flour and salt. Remove from heat.

Gradually add milk. Stirring constantly, cook until mixture thickens. Add turkey, celery, green pepper and pimiento. Put half the potato chips in bottom of a buttered 1 1/2 quart baking dish. Add turkey mixture. Sprinkle remaining chips on top. Bake at 350 degrees for 30 to 40 minutes.
