BEEFY JALAPENO CORNBREAD | |
1 c. yellow cornmeal 2 eggs 1/2 tsp. baking soda 1 (12 oz.) can cream corn 1 lg. onion 4 jalapeno peppers (opt.) 1 c. milk 3/4 tsp. salt 1/2 c. oil 1 1/2 lbs. beef (or ground turkey) 2 c. cheddar cheese Mix cornmeal, milk, eggs, soda, oil, cream corn and set aside. Cook beef and drain. Using a 10 1/2" cast iron skillet, grease skillet and cover with 1 tablespoon cornmeal. Pour 1/2 of the batter in skillet. Sprinkle beef and onion, cheese and peppers on top. Pour remaining batter on top. Bake at 350 degrees for 50 minutes or until golden brown. |
