PINEAPPLE COOKIES 
1 1/3 c. sugar
2/3 c. Crisco
2 eggs, beaten
1/2 c. crushed pineapple
2 tsp. lemon rind
1 tsp. baking soda
Pinch of salt
2 1/2 c. sifted flour

Mix well. Drop by teaspoons on ungreased cookie sheet. Bake 10 minutes at 375 degrees.
