BARLEY SALAD 
1 tbsp. oil
1 c. barley
2 1/2 c. water
Ham bone
1/2 c. olive oil
2 cloves garlic
1/4 c. fresh basil
2 tsp. Dijon mustard
1 tbsp. lemon juice
2 c. cubed ham
3/4 c. Parmesan cheese
1 c. cooked peas

Simmer oil, barley, water and ham bone for 50 minutes until barley is tender. Place olive oil, garlic, basil, mustard and lemon juice in blender until thoroughly blended. Mix cooked barley, ham, cheese and peas and add sauce mixture. Serve warm or cold.
