BAKED POTATO SALAD 
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
3/4 tsp. dry mustard
1/4 tsp. pepper
1 1/2 c. milk
3/4 c. mayonnaise or salad dressing
6 med. potatoes, cooked, peeled and diced
1 pkg. frozen green beans, cooked
1 med. onion, chopped
6 frankfurters, cut in 1/4-inch diagonal slices
1/4 c. buttered soft bread crumbs

Melt butter in a small pan; blend in flour, salt, mustard and pepper. Add milk all at once. Stir over medium heat until mixture thickens and boils 1 minute.

Remove from heat; blend in mayonnaise. Reserve 1/4 cup for topping. Fold potatoes, string beans, onions and all but 6 slices of frankfurters into remaining sauce; spoon into a 2-quart dish.

Arrange 6 slices of frankfurters to make a circle in center top of dish. Spoon reserved sauce over slices; sprinkle crumbs over top. Bake in moderate 350 degree oven for 30-40 minutes or until bubbly hot. Makes 6 servings.
