CLIFF COOKIES (SCOTCH
SHORTBREAD)
 
5 to 6 c. flour
1 lb. Land O'Lakes butter, softened (do not use substitute)
1 1/3 c. sugar
Pinch of baking soda

On large work area mix sugar, butter and baking soda. Place 4 to 5 cups flour next to butter, add flour gradually and mix with hands. Add more flour as needed. Roll out evenly into large rectangle. Prick with fork and cut into 1 1/2 inch squares. Bake at 350 degrees for 10 minutes then check, cookies should be golden on bottom and lightly browned on top. Store in airtight container.
