COCONUT CAKE WITH MARSHMALLOW
FILLING
 
3/4 c. butter
1 1/2 c. sugar
1/4 tsp. salt
2 1/2 c. sifted cake flour
3 tsp. baking powder
3/4 c. water
1 tsp. vanilla
5 beaten egg whites

Cream butter and sugar. Combine dry ingredients. Add alternately with water to creamed mixture. Add vanilla. Fold in beaten egg whites. Pour into layer cake pans. Bake at 350 degrees until light brown. Do not over bake.
