RICE PUDDING - LOW CHOLESTEROL 
2 c. skim milk
2 c. 1% milk
1 c. sugar
1 box Egg Beaters
1 c. uncooked rice
3 tsp. vanilla
2 tbsp. cornstarch
1/4 c. 1% milk

Beat Egg Beaters, sugar and milk; mix well. Pour into non-stick saucepan and heat to almost boiling point, stirring constantly.

Mix remaining 1/4 cup milk with cornstarch, stir into sauce mix. Continue stirring constantly until mixture comes to full boil. Cook about 2 minutes. Pour sauce into casserole. Add vanilla, stir well. Stir in rice.

Beat 3 egg whites until hold in stiff peaks. Add 1/3 cup sugar, beat again at high speed 2 minutes. Spread over pudding. Put in 350 degree oven on broil until brown. Watch carefully so it won't burn.
