POTATO & EGG CASSEROLE 
6 boiled eggs, chopped
6 boiled potatoes, cubed
1 can cream of chicken soup
1 tsp. salt
1/4 tsp. pepper
2 c. sour cream or plain non-fat yogurt

Combine ingredients in casserole. Top with 1 cup grated cheddar cheese and bread crumbs. Bake at 350 degrees for 30 minutes.
