SPICY MARINATED CHICKEN 
1/2 tsp. ground coriander
1/2 tsp. chili powder
Pinch of salt
Juice of 1 lemon
4 chicken breasts
Oil for frying
1 1/2 c. plain yogurt
1/2 tsp. ground ginger
1 tsp. curry powder
1 tsp. cayenne
1 garlic clove, crushed or minced
1 tbsp. ketchup
Grated rind of 1 lemon (zest)
1 bay leaf

In a small bowl, thoroughly mix together the first 4 ingredients. Prick the chicken breast all over with a fork, then rub with the spice mixture; marinate for 2 hours. Heat oil in a large skillet and add chicken breasts; fry until golden brown on all sides and cooked through, 15 to 20 minutes.

Meanwhile make the sauce by placing the rest of the ingredients into a saucepan over low medium heat; heat for 5 to 7 minutes, stirring occasionally.

Transfer the cooked chicken breasts to a heated platter. Extract the bay leaf from the sauce and then pour the sauce over the chicken. Serve immediately. Serves 4.
