RAW CARROT SALAD 
3 c. shredded carrots
1 c. miniature marshmallows
1 c. crushed pineapple
1/2 c. raisins
1/4 c. coconut
1/2 c. mayonnaise
1 c. non-dairy whipped topping

Toss first 5 ingredients together. Mix together mayonnaise and whipped topping that has been thawed. Gently mix into carrot mixture. Serve on lettuce leaf. Yield: 8 servings.
