PINEAPPLE CHEESECAKE BARS 
CRUMB MIXTURE:

1/2 c. cold butter
1 1/4 c. flour
1/3 c. sugar
1 tbsp. grated orange peel

FILLING:

8 oz. cream cheese, softened
1/4 c. sugar
1 egg
1 tbsp. lemon juice
1/2 c. chopped candied pineapple

Make crumb mixture, reserve 1/2 cup. Press into 8-inch pan. Bake 12 to 17 minutes at 350 degrees.

Make filling. Beat until light and fluffy and add pineapple. Pour over crust, add remaining crumb mixture and bake 15 to 20 minutes. Cool, cut.
