CHOCOLATE VELVET CREAM PIE 
CRUST:

1 box chocolate wafers
1/3 c. butter

Crush chocolate wafers finely to make 1 1/2 cups of crumbs. Combine with melted butter and press onto bottom and sides of 9" pie pan. Bake at 325 degrees for 10 minutes.

FILLING:

8 oz. cream cheese
1/2 c. sugar
1 tsp. vanilla
2 egg yolks
6 oz. semi-sweet chocolate
2 egg whites
1 c. heavy cream, whipped
3/4 c. pecans, chopped

Soften the cream cheese and add 1/4 cup sugar and vanilla, mixing until well blended. Stir in beaten egg yolks and chocolate which has been melted. Beat egg whites until soft peaks form. Gradually beat in 1/4 cup sugar. Fold into chocolate mixture. Fold whipped cream and pecans into the mixture. Pour over the crumbs. Freeze. Serves 10 to 12.
