FRUIT 'N BRAN SHORTCAKE 
1 c. skim milk
1/2 c. "Egg Beaters" (cholesterol-free egg product)
6 tbsp. butter, melted
3 med. ripe bananas
1 3/4 c. flour
1 c. 100% bran cereal
1/2 c. firmly packed brown sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1 pt. strawberries, sliced
3 tbsp. orange juice
Mint sprigs for garnish

Blend milk, Egg Beaters, butter and one mashed banana on low speed of mixer. Add flour, bran, brown sugar, baking powder and cinnamon. Beat on medium speed 30 seconds. Spread in 2 greased 8 inch round baking pans. Bake at 350 degrees for 30 minutes or until done. Remove from pans; cool.

Mash or puree 3/4 cup strawberry slices with 2 tablespoons orange juice. Slice remaining bananas; toss with remaining strawberries and orange juice. Place one cake layer on serving plate. Top with half the puree and half the fruit mixture; repeat layers. Garnish with mint if desired. 10 servings.
