CON QUESO RICE 
1 1/2 c. brown rice
1/2 c. dry black beans or black eye peas
3 cloves garlic, sauteed
1 lg. onion, chopped, sauteed
1/2 lb. Ricotta cheese
3 c. shredded Jack or Cheddar cheese
1 (4 oz.) can green chili peppers, chopped

Cook rice and beans following directions. Saute garlic and onion. Mix Ricotta with 2 1/2 cups cheese; may thin with a little milk. Mix rice, beans, garlic, onion, and chili peppers. Layer this with cheese mixture in greased casserole dish. End with rice.

Bake at 350 degrees for 1/2 hour. Sprinkle 1/2 cup cheese on during last 5 minutes. Best made ahead and refrigerated or frozen.
