ROCK CORNISH HENS WITH ORANGES 
4 rock Cornish hens
2 oranges, peeled and sliced
3/4 c. orange juice
3/4 tsp. salt
Dash of pepper
1/3 c. brown sugar
2 oranges, halved
2 tbsp. whole cranberry sauce

Wash and dry hens. Fill cavity of each hen with slices of orange, fasten with cavity closed and put hens, breast side up, in roasting pan. Make basting sauce of orange juice, salt, pepper and brown sugar. Roast hens, uncovered at 450 degrees for 15 minutes. Brush generously with basting sauce 3 to 4 times during this period. Reduce heat to 350 degrees; cook 1/2 hour longer; basting twice. Remove hens from oven and remove orange slices from cavities. Serve hens garnished with orange halves and topped with cranberry sauce.
