CHICKEN PICANTE 
4 split chicken breasts
1 large jar picante sauce
1 (8 oz.) brick monterey jack cheese, grated
2 c. cooked rice

Place chicken breasts in bottom of a 13 x 9 inch baking dish. Cover the chicken with one-half of the grated cheese. Pour the entire jar of picante sauce over the chicken, completely covering it. Cover the baking dish with aluminum foil.

Bake at 400°F for 1 hour or until chicken is done. Place remaining cheese on top of dish and continue baking for 5 to 10 minutes, until cheese is melted. Serve over cooked rice.
