PUMPKIN ROLL 
Makes 2 rolls.

ROLL:

3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour

FILLING:

1 (8 oz.) pkg. cream cheese
1 c. powdered sugar
1 tsp. vanilla
2 tsp. butter

Combine ingredients for the rolls, mix on medium speed until well blended. Bake each roll on 9"x13" cookie sheet or jelly roll pan on 375 degrees for 10 minutes or until toothpick inserted in middle comes out clean. Turn onto wax paper sprayed with Pam. Spread each roll with filling and roll up as you would for a jelly roll. Wrap with foil or waxed paper and refrigerate.
