PUMPKIN ROLL 
ROLL (OUTER LAYER) :

3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. all purpose flour
1 tsp. baking soda
1/2 tsp. cinnamon
Nutmeg (sprinkle)

FILLING:

3 tbsp. butter
8 oz. cream cheese
1 tsp. vanilla
1 c. powdered sugar

Preheat oven to 350 degrees. Grease and flour 9 x 13 inch cookie sheet. Line cookie sheet with wax paper and grease. Mix outer layer and spread thinly on cookie sheet. Sprinkle with nutmeg. Bake 15 minutes and cool to touch. (Do not allow to stiffen). Sprinkle with additional powdered sugar. Roll lengthwise and cool with seam side down on rack (with paper). Mix filling. Unroll and spread on cake. Reroll, remove paper and refrigerate in aluminum foil.
