ZUCCHINI BREAD 
2 c. sugar
3 eggs
1 c. oil
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. baking soda
1/2 tsp. baking powder
2 c. grated zucchini
1 c. raisins
1 (8 oz.) can crushed pineapple
1 c. nuts

Beat together until light and foamy, sugar, eggs, oil, vanilla. Add remaining ingredients. Bake 350 degrees. Makes 2 large loaves or 3 smaller ones.

TIP: Grease pans and line with wax paper. Then grease wax paper. Loaf will comb out easy. Take paper off hot loaf.
