BLACK OR RED BEANS AND RICE 
1 large (16 oz.) can beans, drained and washed
1 (16 oz.) can diced tomatoes
1 tsp. chopped garlic
small amount chopped bell pepper and celery (if desired)
salt and pepper to taste
1 link kielbasa sausage, sliced thin

Place all ingredients in pot and simmer for 15 to 20 minutes. Serve over rice.
