HAMENTASHEN (Haman's Hats) 
2 1/2 c. flour
1/2 tsp. salt
3 tbsp. sugar
1 c. butter
3 egg yolks
3 tbsp. white vinegar
3 tbsp. cold water
Assorted fruit
Pastry filling

Mix up dough 1 day ahead. Preheat oven to 400 degrees. Combine 1 1/2 cups flour, salt, sugar and butter, rubbing butter into flour with fingers. Beat yolks slightly with fork, adding vinegar and water. Sift 1 cup flour into egg mixture, mix lightly.

Combine both mixtures, blending well. Refrigerate in a plastic bag overnight. Put out and cut into 2 1/2 inch circles. Fill with 1/2 teaspoon fruit, pinch into triangles. Bake 20 minutes.
