LENTIL CASSEROLE 
3/4 c. lentils, dry
3/4 c. chopped tomatoes (large chunks)
2 c. shredded yellow cheese
1/4 c. chopped onion
2 eggs
1/8 c. chopped green pepper
1/8 tsp. sweet basil
1/8 tsp. Accent
1/8 tsp. salt
1/8 tsp. oregano
1 tbsp. Parmesan cheese

Cook lentils approximately 30 minutes until tender enough to easily cut. Saute onions and peppers. Combine all ingredients. Bake in oiled baking dish at 300 degrees for 45 minutes.
