SALMON PATTIES 
1 (15 1/2 oz.) can pink salmon
1 egg
1/3 c. minced onion
1/2 c. cracker crumbs
1 1/2 tsp. baking powder

Drain salmon, reserve 2 tablespoons of the juice. Mix salmon, egg and onion. Add cracker crumbs. Add baking powder to salmon juice and stir into salmon mixture. Shape into patties and fry in small amount of shortening until golden brown. 4-6 servings.
