SHRIMP SALAD, NEW ORLEANS 
1/4 c. white rice
1 c. canned shrimp
3/4 tsp. salt
1 tbsp. lemon juice
1 tbsp. minced green onion
2 tbsp. creamy French dressing
1 tbsp. chopped stuffed olives
1 tbsp. black olives
1/4 c. slivered green pepper
3/4 c. diced raw cauliflower
Speck pepper
1/3 c. mayonnaise or salad dressing
1/2 sm. head lettuce, finely shredded

Cook rice - cool. Cut shrimp in pieces or buy canned tiny shrimp. Combine next 9 ingredients and rice. It is better if prepared 3 or 4 hours ahead to marinate. Serve on shredded lettuce. 4 servings
