CURRIED SEAFOOD SALAD | |
1 1/2 c. dry rice, cooked (preferably minute rice) 3/4 c. mayonnaise 1 1/2 tsp. lemon juice 3/4 tsp. curry powder 1 tbsp. grated onion (or less, to taste) 1 c. diced cooked shrimp (or crab) 1 c. chopped celery About 1 hour before serving, combine mayonnaise, lemon juice, curry powder and grated onion, mixing well. Combine shrimp and celery in a bowl and stir in the mayonnaise mixture. Then add the rice and mix lightly with a fork. Chill. Serve on crisp lettuce. Garnish with tomato and black olives. |
