CRAB MOUSSE 
2 env. gelatin
3/4 c. cold water
2 med. cucumbers
1 ripe avocado, peeled, pitted
2 tbsp. dill, chopped
1/2 sm. onion
1/2 c. mayonnaise and 1/2 c. sour cream
1/2 c. lemon juice
1 1/2 tsp. salt
1/4 tsp. cayenne pepper
4 c. crabmeat
2 c. heavy cream

Oil 12 cup mold. Sprinkle gelatin over the water - set aside to soften for 10 minutes. Peel and seed 2 cucumbers. Puree avocado, cucumber, dill and onion in processor. Mix mayonnaise, sour cream, lemon juice, spices. Add puree. Stir in crabmeat. Set gelatin over boiling water and stir until clear and smooth; then stir into crabmeat mixture.

Whip cream to soft peaks and fold into crab mixture. Pour into mold, cover, refrigerate overnight. For serving, arrange third cucumber, sliced, around mold on platter.
