CHICKEN AND DRESSING CASSEROLE 
4 or 5 leg quarters
1 lg. onion
3 stalks celery
1 pkg. cornbread crumbs stuffing mix
1/2 c. bell pepper
1 can cream of celery soup
1 can cream of mushroom soup
1/2 tsp. salt
Pepper
Seasoning salt

Boil leg quarters with 2 1/2 celery stalks, and 3/4 of onion. Cut up remaining onion, celery stalk and bell pepper. Remove chicken from bone. Cut in bite size pieces. Mix soups, stuffing mix, bell pepper, onion, celery and 2 1/2 cups of broth (which chicken was cooked in). Add chicken and seasoning. Mix well. Pour into greased casserole dish. Bake at 350 degrees for about 45 minutes. Leftover turkey can be used for chicken.
