WALNUT RICE STUFFING | |
3 tbsp. butter 1 sm. onion, chopped 1/2 c. raw rice 1/2 c. finely chopped 1 1/4 c. water 1 chicken bouillon cube 1/4 tsp. poultry seasoning 1/3 c. walnuts chopped Salt, pepper to taste A few chopped celery leaves Mushrooms Saute onion and celery in butter. Add rice and saute until rice is golden and vegetables are soft. Stir in mushrooms. Celery leaves, water and seasonings. Cover and simmer for 20 to 25 minutes until rice is tender and all the liquid is absorbed. Remove from heat and stir in walnuts. This is enough stuffing to fill a large chicken, small turkey or six whole chicken breasts. |
