QUICK APPLE BUTTERSCOTCH DESSERT 
1 c. sugar
1 c. flour
2 tsp. baking powder
1 c. buttermilk
1 qt. partially cooked apples, seasoned with sugar and cinnamon to taste
Butterscotch chips (about 1 cup)
1 stick (1/2 cup) butter
11 x 13 baking dish (I use oven proof glass)

Wash, peel, core and slice apples. Cook in heavy pan (3 quart) with sugar and cinnamon to taste, until hot through and tender. Keep hot.

Melt butter in baking dish (in oven). Meanwhile mix or sift together 1 cup sugar, 1 cup flour and 2 teaspoons baking soda. Add 1 cup buttermilk; mix well. Pour over melted butter. Pour hot apples over batter; sprinkle butterscotch chips over apples. Bake 1 hour in a preheated oven 350 degrees (moderate). Apples may be cooked in advance and reheated. Canned apples may be used, also. Just heat before pouring over batter.
