ITALIAN BREAD SALAD 
8-10 thick slices French bread, very lightly toasted
4-6 thinly sliced ripe tomatoes
1 cucumber, peeled and thinly sliced
1 sm. red onion or 2-3 green onions thinly sliced
12 fresh basil leaves, minced
2-3 tbsp. fresh oregano, minced
2-3 tbsp. fresh parsley, minced
1/2 c. olive oil
1/4 c. red wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
Shredded Mozzarella cheese (optional)

Brush one side of bread slices with olive oil; place on a baking sheet. Broil 6 inches from heat until brown.

Combine next 6 ingredients and let stand up to 2 hours at room temperature. Arrange toasted bread slices in a large shallow bowl. Spoon vegetable mixture over bread.

Combine remaining ingredients in a jar; cover tightly; shake vigorously. Pour over vegetables and bread; sprinkle with cheese, if desired. Serve immediately. 8-10 servings.
