FRIED APPLE RINGS 
3 med. (1 lb.) tart cooking apples, cored
1/4 c. butter (see note)
1 tbsp. packed brown sugar
1/4 tsp. cinnamon

Cut ends from apples and slice each apple crosswise in 4 rings. In large skillet melt butter and stir in sugar and cinnamon. Add layer of apple slices and cook, over medium heat, turning once, until golden and tender but still intact. Stack slices at side of skillet when almost done and cook remaining apples. Serve warm topped with pan juices. Good with sausage links or patties, pork chops, ham or pancakes. Makes 4 servings. NOTE: Substitute bacon or sausage fat for butter if desired.
