COCONUT MACAROONS 
2 egg whites
dash of salt
2/3 c. sugar
1 (3 1/2 oz.) can flaked coconut
1/2 tsp. vanilla

Grease a cookie sheet. Beat egg whites, vanilla and salt till soft peaks form. Gradually add sugar, beating until stiff peaks form. Fold in coconut. Drop from a teaspoon 1 1/2-inches apart onto a greased cookie sheet.

Bake in a 325°F oven about 20 minutes. Cool on a wire rack.

Makes 20 to 24 cookies.
