SWEET AND SOUR CHICKEN 
4 chicken breasts cut into cubes
1 1/2 c. Minute Rice
1 bottle Red Russian Dressing
1/2 of a 10 oz. jar apricot preserves
1/2 envelope onion soup mix
3 tbsp. water

Preheat oven to 325 degrees. Pour rice in bottom of a 12 x 15 inch pan. Pour 1 1/2 cup water on rice. Place chicken on rice. Stir rest of the ingredients together and pour over the chicken. Bake 1 hour.
