CRAB QUICHE 
1 deep dish Pet Ritz pie shell, pricked with fork, unbaked
1/2 c. mayonnaise
2 tbsp. all purpose flour
2 eggs, beaten
1/2 c. milk
1 packed cup white crab meat, fresh
1/2 lb. Swiss cheese cut in 1/4 inch cubes
1/3 c. chopped green onion (may use reg. onions)
Parsley flakes, dried as desired
Red cayenne pepper, optional

Combine mayonnaise, flour, eggs, milk; mix thoroughly. Stir in crab meat, cheese, onion and parsley flakes if you substituted using the green onions for color.

Spoon in pie shell and sprinkle top with cayenne pepper. Bake at 350 degrees for 30 to 40 minutes or until firm in center. Let cool a few minutes before cutting.
