FLAPJACKS 
2 c. sifted flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
2 eggs
2 c. sour milk
1 1/2 tbsp. melted butter

Sift flour, soda, salt and sugar together. Beat eggs until light. Add milk, then gradually add to flour mixture. Beat until smooth and free from lumps, then add melted butter. Pour batter into a pitcher. Heat and grease a griddle. Pour in enough batter to make 5 inches in diameter. Cook until brown underneath. Turn and brown on other side.
