HOMEMADE RED CABBAGE 
4-5 c. shredded fresh red cabbage (I use food processor)
2 tbsp. bacon fat
Salt and pepper
2 apples, peeled and sliced thin
1 1/2 to 2 c. hot water

SAUCE:

2 tbsp. flour
2 tbsp. cider vinegar
4 tbsp. brown sugar

Melt bacon fat in skillet. Add above and simmer approximately 20 minutes until soft. Combine sauce ingredients and mix well. Add to cabbage and simmer 3 more minutes. Stir and serve hot. Great with roast pork.
