FRENCH TOAST AND STRAWBERRY
BUTTER
 
1/3 c. fresh or frozen strawberries
1/2 c. SOFTENED butter
1/8 c. powdered sugar
2 eggs
1/2 c. milk
1 tsp. cinnamon
4-6 slices wheat, raisin, or French bread

(A couple days old and little dry is best).

STRAWBERRY BUTTER: If you're using frozen strawberries, place them in the blender with the powdered sugar and half the softened butter (1/4 cup). Whirl until fluffy. If you're using fresh strawberries, wash them, cut off the stems, and cut into halves. Combine as with frozen fruit.

FRENCH TOAST: Break the eggs into a pie tin, add the milk and cinnamon and beat with a fork. Dip the bread slices, one at a time, into the egg batter. Wet both sides but do not soak. Place on griddle or frying pan which has been warmed to medium heat and greased with a pat or two of butter. Serve with strawberry butter and syrup; whipped cream if it's someone's birthday!
