GROUNDNUT STEW 
1 c. finely chopped onion
5-8 cloves garlic, finely chopped
6 tbsp. oil
1 tsp. hot pepper
1 tsp. powdered ginger
1 tbsp. brown sugar
1 c. ground nuts or 1/2 c. peanut butter and 1/2 c. ground peanuts
Few drops lemon or lime
3 tbsp. soy sauce (optional)
3/4 c. plain milk
3/4 c. coconut milk (or use all plain milk)

Heat oil; saute onion and garlic. Add all to onions and simmer until covered for 10-20 minutes. Adjust the consistency to your taste by adding more peanut butter or more milk. It will thicken as it cooks. (Never cover dishes where you've used coconut milk.) Serve this stew over rice or other cooked grain.

Groundnuts = peanuts. Grow plentifully in Nigeria and this is a popular use. They are also used often in soups.
