CRANBERRY AND ORANGE PINWHEELS | |
1 tbsp. cornstarch 3/4 c. whole berry cranberry sauce 1/4 c. orange marmalade COOKIES: 3/4 c. finely packed brown sugar 1/2 c. butter, softened 1 egg 1 3/4 c. all purpose flour 1 tsp. baking powder 1 tsp. grated orange peel 1/4 tsp. salt 1/4 tsp. allspice Combine filling ingredients and boil over medium heat stirring constantly. Chill. Beat brown sugar, butter, and egg until light and fluffy. Lightly spoon flour into measuring cup. Level off. Sift in flour, baking powder, orange peel, salt, and allspice. Mix well. Cover and chill 1 hour. Roll dough into 16 x 8 inch rectangle on floured surface. Spoon and spread cooled filling over dough. Starting at 16 inch side roll up jelly roll fashion. Wrap tightly in plastic wrap and freeze for 2 hours at least. Heat oven to 375 degrees. Grease cookie sheets. Cut dough into 1/2 inch thick slices. Bake for 9-13 minutes. |
