PERSIMMON COOKIES | |
1 tsp. baking soda 1 c. persimmon pulp 2 c. sifted flour 1/2 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. nutmeg 1/2 tsp. salt 1/2 c. shortening 1 c. sugar 1 egg, beaten 1 c. chopped nuts 1 c. white raisins; optional Dissolve soda in persimmon pulp and set aside. Sift together flour, cinnamon, cloves, nutmeg, and salt; set aside. Cream together shortening and sugar until fluffy, then beat in egg. Stir dry ingredients and persimmon mixture into creamed mixture. Stir in nuts and raisins. Drop by teaspoonfuls onto well greased cookie sheets. Bake at 350 degrees for 10-12 minutes. Makes about 6 dozen. |
