GRILLED CHICKEN CASINO 
1 (8 oz.) boneless chicken breast, skinned
1 onion, diced
1/2 red pepper, diced
2 oz. Mozzarella cheese, shredded
2 oz. bacon strips, diced

Trim all of the fat from the chicken breast and grill. Saute bacon until crisp, then add pepper and onion. Saute until tender. Place bacon mixture on chicken breast. Top with Mozzarella cheese. Place under broiler until cheese melts and serve.
