ZUCCHINI CASSEROLE IMPERIAL 
4 c. zucchini, sliced
2 c. boiling water
2 eggs
1 c. mayonnaise
1 med. onion, chopped
1/4 c. chopped green pepper (optional)
1 c. Parmesan cheese, grated salt & pepper to taste
1 tbsp. butter
2 tbsp. buttered bread crumbs (optional)

Cook zucchini in water until tender; drain in large bowl, beat eggs. Stir in mayonnaise, onion, green pepper, cheese, salt and pepper. Add zucchini, put into a greased 1-1/2-quart baking dish, dot with butter and sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes or until bubbly. Serves 6.
