EASY SKILLET COBBLER 
2 1/2 c. sliced peaches
2/3 c. sugar
3 tbsp. butter
1 tsp. lemon juice
1 c. biscuit mix
2 tbsp. butter
1/3 c. milk
Cinnamon, to taste
Sugar (optional)

Combine peaches and 1/3 cup sugar. Add water to make 3 1/2 cups. Put peaches, butter and lemon juice in a 10 inch skillet. Cover and cook over medium heat until simmering.

Combine biscuit mix and 1/3 cup sugar. Cut in 2 tbsp. butter to coarse crumbs. Add milk to make soft dough. Spoon over hot fruit. Cover and cook until dough is done, about 12-15 minutes. Sprinkle with a mixture of sugar and cinnamon, if desired.
